- 3/4 cup Sugar
- 1 tsp Cardamom powder

- 8-10 Cashews

- 1 tbsp Milk powder
Instructions to make to make Caramel Kheer
- Coarsely grind rice in a mixer jar and wash the rice.
- Heat ghee in a saucepan and fry cashews and almonds, keep aside.
- Add sugar in remaining ghee and start heating the pan at medium flame slowly, it starts to melt and the colour of the sugar syrup starts turning brown.
- Add 1/4 cup water and let it boil, then switch off the heat.
- Boil milk and add washed broken rice into that and let it cook.
- Cook till it starts thicken and milk reduced into the pan at 1/3rd.
- Add fried nuts, milk powder and cardamom powder.
- When it thickened, turn off the heat.
- Heat caramel syrup for 3-5 seconds and add the prepared caramel to the thickened kheer and give a final stir.
- Mix well and garnish with nuts, serve chilled for best results.
