- In heavy bottom pan add milk and wait for a boil, then lower flame and simmer for 4-5 minutes by adding cardamom + bay leaf.

- Cook under medium flame for 10 - 14 minutes.
- Now add salt + sugar + cashews only and simmer for 8-10 minutes.
- Lastly add ghee and simmer for 2 minutes more. Switch off flame and then add raisins. Payesh / Kheer is done and let it come to room temperature.
- After cooling, refrigerate it. Garnish with dry fruits of your choice.
- Serve after 4-5 hours of cooling as it tastes much better. Serve chilled.
